1 package crab cake mix

1/2 cup water

1/4 cup mayonnaise

2 teaspoons Creole mustard (optional)

1 pound lump or backfin crabmeat

1/2 cup vegetable oil

directions

Mix crab cake mix, water, mayonnaise and Creole mustard in large bowl until well blended. Add crabmeat; toss gently to mix. Refrigerate 30 minutes. Shape into 2-inch crab cakes.

Heat 1/4 cup of the oil in large skillet on medium-high heat. Carefully add crab cakes, a few at a time.

Fry 4 minutes or until golden brown, turning once. Drain on paper towels. Repeat with remaining crab cakes, adding remaining oil as necessary.
